Gujarati Lapsi is a fabulous tasty dish made from broken wheat also known popularly as “dalia”. Lapsi is one of the favorite sweet dishes among the Gujaratis. It is specially made on auspicious occasions. Buying a new home or a new car, getting a new job or any occasion like naming ceremony or house warming, lapsi is made for all of these.
Broken wheat is nothing but whole raw wheat grains cleaned and then processed coarsely. As it doesn’t undergo refining its very healthy. You can use broken wheat in many dishes like lapsi, khichdi, upma etc.
Lapsi is very down to earth and easy to make without any fancy frills. It is also a part of Rajasthani cuisine as well.

Ingredients to make Lapsi
- ½ cup Dalia / Broken wheat
- ½ cup Sugar
- ⅓ cup Ghee / Clarified butter
- 8/9 Almonds / Badam
- ¼ tsp Elaichi powder / Cardamom powder
- 8-9 Kismis / raisins
- 2 cups Water
Prepping For Lapsi
- Slice the Dry fruits
Method for making Lapsi
1)In a heated kadia add all of the ghee and once its a little hot add the dalia / broken wheat and stir it for the next 4-5 minutes on a medium flame or until the dalia becomes brown.
2)Once it reached to a golden brown colour then add kismis / raisins and stir for just about a min and then add 2 cups of water, and mix well.
3)Now transfer it in a cooker and now cook the dalia till we hear 2 whistles and then turn the flame on low and cook for 5 minutes.
4)Once the cooker has cooled down a bit it’s time to look if the dalia is fully cooked, so just pinch the dalia and if its soft then it’s nicely cooked.
5) just in case your dalia is not cooked then cook for 5 more minutes, and don’t forget to add more water if its become dry.
6)Now transfer it in the same kadai as before and then add the sugar and mix it well and cook for the next 5-6 minutes or until you start seeing the ghee oozing out.
7)Now after 5-6 minutes add the elaichi powder that’s cardamom powder and some almonds
Mix it well and then its ready to serve
