5 minLeftover chapati or roti is a very common occurrence in any indian household. So what do you do with stale rotis ? That’s the real question.
In reality that’s no question at all as there are many things one can do with the leftover chapati / roti. You can utilise leftover food in general and leftover chapati topping the list I bring you a very amazing leftover chapati recipe that you will love so much that you might just make some extra rotis so you can enjoy this dish. Leftover rotis can remain good for just a day so try to make this recipe the very next day.
Making recipes using stale rotis can actually be fun and a way to not waste food. In this leftover roti recipe we are going to make snacks or it can even become your main dish.
We will be making the mexican quesadilla which is generally made with tortillas. Tortillas are nothing but flour rotis. They can even be made using the corn flour. So here we use the leftover chapati and instead of the tortillas and added cheese with few other toppings.
You can always add your favorite shredded meat to it if you like and make it a main dish, and for vegetarians you can add refried beans, salsa , guacamole lettuce … whatever your heart desires or whatever is easily available in your pantry.

Ingredients for making Leftover Chapati recipe
Leftover Chapati or roti | 4 | |
Cheese slices or shredded | 3 or 1 cup | |
Onions, diced | ¼ cup | |
Capsicum, diced | ¼ cup | |
Olives (optional) | ¼ cup or less | |
Jalapenos (optional) | ¼ cup or less | |
Chilli flakes | 1 tbsp | |
Tomato ketchup / sauce | 1 tbsp | |
Italian mixed herbs | 1 tbsp | |
Red Pepper/chilli sauce (optional) | 1 tsp | |
Oil | 1 tsp |
Prepping
- Dice up the vegetables keep aside in a bowl.
- Shred the cheese.
Method for Making Option 1- Quesadilla
- In a medium hot pan drizzle a little oil.
- Place the roti on it , making sure the more cooked side is on top.
- Add the shredded cheese and sprinkle the chopped vegetable.
- Add the chilli flakes, italian mixed herbs, ketchup and red chilli/ pepper sauce.
- Cover it up with the 2nd roti making sure the more cooked side in facing the vegetables.
- Cook till golden brown and crisp on both sides while lightly pressing the roti all the time.
- Using a pizza cutter or knife cut it into four pieces and serve hot.
Method for making Option 2- Roll
- Take a leftover Chapati and place the cooked side upwards on a plate.
- In the center of the chapati draw a straight light with the ketchup and pepper/chili sauce.
- Add shredded cheese/ cheese slices (cut into smaller pieces)
- Add the vegetables, chilli flakes and italian mixed herbs.
- Fold one side of the roti on this mix. Take the other side and carefully while holding the first side place it on top of the first side.
- Place this folded side facing the bottom of the heated oiled pan.
- Cook till golden brown on both sides.
- Serve hot
Method for making Option 3- Pockets
- Take a leftover Chapati and place the cooked side upwards on a plate.
- Add the ketchup, chili flakes and Italian mixed herbs in a whirlpool motion.
- Fold the Roti into half and repeat the same process on the half side which is face you.
- Fold that into half as well. Doing this will give you two pockets.(check out my video will be easier for you to understand)
- Add the shredded cheese or half cut cheese slices along with the veggies.
- Place it on top of the oiled griddle and cook till golden brown on both sides.
- Serve hot.
