Spring rolls are savoury rolls with cabbage and other vegetable fillings inside a thinly wrapped cylindrical pastry. They are extremely yummy and no wonder very popular indo chinese snack. Spring rolls are crunchy from outside with a spiced vegetable filling from the inside.

Ingredients for the Spring Rolls
- 5-6 Spring Roll Wrapper
- 1 cup Cabbage / Patta Gobi
- 1 cup Carrots /Gajar
- ¼ cup Green beans / French beans /Faras beans
- 2 tbsp Bean sprouts
- ¼ cup Spring onion leaves / Hare pyaz ke patte
- ¼ cup Spring onion bulbs / Hare pyaz ka upari hissa
- ½ tsp Black pepper / Kali mirch
- 1 tsp Soya sauce
- 1 tsp Red chilli sauce
- ½ tsp Vinegar
- 3 tbsp Maida / All purpose flour
- 1 tbsp & then frying Oil
- as per your taste Salt
Prepping for the Spring Rolls Recipe
1)Dice up the vegetables keep aside in a bowl.
Method for making the Spring Rolls
So guys you already know that when we are cooking chinese food the flame has to always be on high and that you cook your food in the biggest wok or vessel you have in your house.
1)So that being said add some oil to your wok.
2)Once it’s hot add the green onion bulbs, all of the carrots, the green beans, then the cabbage and the bean sprouts, and mix them in well and cook for just about a min or two
3)After about 1-2 minutes later add the black pepper powder, soya sauce, salt
and be careful with the amount of salt that you are adding as these sauces already have a huge amount of salt in them,
4)And then add some vinegar, red chilli sauce and the spring onions, and mix them in well and cook for just about a min.
5)After a min remove the spring roll stuffing in a bowl and wait for it to come down to room temperature.
6)Meanwhile make the glue, well if you are making non veg spring rolls then you can just use eggs as the glue but since you are making veggie spring rolls take the
all purpose flour and add very little water to it and mix it well, the consistency of this glue has to be very thick slurry kind.
7)And keep it aside and take the spring roll wrapper and add the spring roll stuffing to one side of the wrapper
8) and then add the glue to the 3 corners
9) and then fold the two sides, make sure that they are sticking properly.
10) Then apply just a little bit of the glue to the corners as well as the top of the folded part and of course on the top
11)now roll it tightly and make sure that the glue is sticking all of the ends or else the veggies will come out when you are flying.
12) Now heat the oil for frying and add the spring roll to the oil and turn the flame on medium and fry till the time it becomes golden brown color from all sides.
13)And once you get to the desired color then remove it in a plate covered with paper towel so that it soaks up oil that excess oil, and then repeat the same for the rest of the spring rolls.
14)Now take a knife and cut it from the center and do serve while hot with the sweet spicy chinese sauce.
