Let me tell you how this Aloo Pyaz ki Sabji came to life in our house. So you guys by  know that i love spicy food and any thing chatpata is good in my books. So I came home after a long and trying day and on reaching home i realised that i had totally forgotten about buying vegetables from the grocery store and of course with my luck my friends decided to come over. So i rush in the kitchen to see if i can restore some of their faith in me when it came to instant chatpata meals.

So i see i have few potatoes and onions , i can now breath, so i check my fridge and yes i have few tomatoes too… so i decide i am going to make the best Aloo Pyaz ki Sabji that i can with this, so i checked all the maslas i had and then with a big smile on my face i start with the magic.

Of course i made my friends to chop the veggies after all what’s the point in being so formal right 🙂 ?

So in about 20 minutes we have the best tasting Aloo Pyaz ki Sabji along with roti and lots of pats of Job well done in my kitty.

That’s why this veggie has some non traditional masalas but trust me gusy you gotta try it out. It’s been since then become a regular in our house and i am sure it will be the same with you.

Ingredients to make Aloo Pyaz ki Sabji

Potato 3 Medium size
Onion 2 Medium size
Tomato 4 Medium size
Dhania / Cilantro ¼ cup
Goda masala ¼ tsp
Lasun / Garlic 10
Red Chilli powder 1 tbsp
Dhana Jeera powder / Coriander Cumin powder 1 tbsp
Haldi /Turmeric ¼ tsp
Rai / Mustard seed ¼ tsp
Jeera /Cumin seed ¼ tsp
Sambhar masala 2 tsp
Pav bhaji masala ½ tsp
Salt as per your taste
Oil 3 tbsp

Prepping for Aloo Pyaz Sabji 

  1. Wash the potatoes thoroughly and without peeling the skin chop the  potatoes, onions and tomatoes.
  2. Mash the Garlic.

Method for making the Aloo Pyaz Sabji

 

1)So in a pressure cooker add the oil and once its hot add rai which is mustard seeds and once they sizzle

2) add the jeera which is cumin seeds and then the curry leaves followed by hing and the mashed garlic and stir it for 30 seconds

3)then add the kashmiri red chilli powder and turmeric and onions and cook for 3-4 minutes or until the onions are 90% cooked.

4)Then add the tomatoes stir it around.

5)At this time add the salt, goda masala, pav bhaji masala, dhania jeera powder, sambar masala, and give it a quick stir and now cook the tomatoes for the next 3-4 minutes or until the the tomatoes are 90% done.

6)After 4 minutes your tomatoes should be cooked so add some fresh dhania leaves          followed by the chopped potatoes and give it a good stir..

7)Now add the 2 cups of hot water and stir it  

8)and then cover the lid and wait till the time you hear 3 whistles.

9)After 3 whistles and once the cooker is a bit cooled open the lid and give it a quick stir and then serve while hot.

This dish can be served with roti, phulka or even rice. And you can adjust the water and spicy quantity as you wish.
