10 minSo guys making Egg Bhurji / Anda bhurji / Anda Khagina is not rocket science but everyone has their own way of making it so today i am going to show you how i make my style of Egg Bhurji / anda bhurji which is very simple and very similar to the one that you get on mumbai streets..
Egg bhurji is a dish popular in the Indian subcontinent, especially north and western India and Pakistan. It is often confused with scrambled eggs and the Parsi dish akuri. The difference lies in its preparation and addition of sautéed chopped onions, chilies and optional spices. It is usually served with rotis, naan, bread or pav.
Its is a great option for breakfast, lunch or even dinner.

Ingredients to make Egg Bhurji
Eggs / Anda | 5 | |
Onion /Pyaz | 2 | |
Tomato | 3 | |
Green Chilli | 6 | |
Cilantro / Dhanya | ¼ cup | |
Ginger /Adrak | ¼ tsp | |
Turmeric /Haldi powder | ¼ tsp | |
Garam masala | ¼ tsp | |
Pav bhaji masala | ¼ tsp | |
Oil | 3 tbsp | |
Salt | as per your taste |
Prepping for the Egg Bhurji
- Dice up the vegetables keep aside in a bowl.
Method for making the Egg Bhurji
1)So take 5 eggs and now using a egg beater let’s beat the eggs for good 30 seconds and then keep it aside and now start with the cooking process
2)So to a large wok add about 2-3 tbsp of oil and about 1 tsp of butter and once its hot add 6 sliced green chilies and stir
and guys be alarmed by the amount of green chillies as the ones i am use are very mild and of course you can alter the spiciness as per your taste as well.
3)Then after about 1 minute add 2 finely medium size chopped onions and stir it well
4)Then add the salt so the onions can cook a little faster and haldi which is turmeric and mix well and cook for the next 4-5 minutes or until the onions are fully cooked.
5)After about 4 minutes the onions should be almost cooked so add ¼ tsp of ginger paste followed by 3 medium size finely chopped tomatoes, then ¼ tsp of pav bhaji masala, ¼ tsp of garam masala, and mix it well and now let’s cook on low flame for the next 5-6 minutes or until the tomatoes are fully cooked, make sure to cover with a lid
6)6 minutes done so open the lid and the onions and tomatoes should be nicely cooked so give it a give stir and then add the beaten eggs and keep stirring it in, make sure the flame is on medium.
7)After about a minute add about ¼ cup of fresh dhania and mix that in as well.
And guys it’s up to you how u like your bhurji if you like it watery you can stop right here cause as they are warm they will keep getting cooked.
But if you are like me and like them fully cooked and dry then cook for 1-2 more minutes
8) and once the bhurji is ready then remove it in a serving bowl and garnish with some more fresh dhania
And guys do serve this bhurji with pav, or a slice of bread or even roti . it’s your choice and it’s a perfect breakfast or a light dinner so make and let me know how you like it..
