2)Once it’s mixed in start adding water and knead a soft dough the same way that you knead the dough when you making roti.
3)Once the dough is ready and soft just cover it up and keep it aside
Time to make our stuffing
1)So in a bowl add the diced onions, garam masala, amchur powder that is dried mango powder, carom seeds that’s ajwain, diced up ginger that’s adrak, coriander powder thats dhania powder, Kashmiri red chilli powder, sliced green chillies followed by dhania that’s cilantro and now mix it all in,
2)In the end let’s add the salt and mix well again.
Now guys whenever you make this paratha make sure after you make the stuffing you immediately start rolling the parathas or else the onions will start oozing water and then your paratha can become lumpy.
Time to put it together
3)So sprinkle some dry flour on a clean surface and taking a small amount from the dough and let’s start rolling it into a disc by using a belan or a rolling pin till it reaches 3-4 inches in diameter.
4)Now taking a generous amount of this stuffing say about 2 tbsp and land it in the center of the round disc.
5)Now start collecting the sides of this disc and bring it towards the center and then twist and take the excess amount of dough out
6)and now very gently press it on the surface and start rolling it, till you are at 5-6 inches in diameter.
7)Now it’s time to make it look a little pretty so sprinkle some kalonji which is onion seeds
(totally optional)and some dhania which is cilantro
8) and using a rolling pin on it we roll it 2-3 times so the spinkled stuff sticks to the paratha.
Time to start roasting the paratha
9) heat the griddle and to it spread some ghee which is clarified butter.
10) and then very gently land the paratha on it and now cook it for about a minute on medium flame.
11)After a minute flip the paratha and apply some ghee on top and lets cook it for another 30- 45 seconds
12)then flip and apply ghee and roast till both sides are golden brown in color.
13)Once the paratha looks done remove in a plate and serve while hot with Punjabi Chatpati Green Chutney or Curd.
