Shahi Paneer is a delicious creamy gravy made with paneer. Shahi means royal and Paneer is cottage cheese And at the name suggests this is a royal paneer dish literal translation would be Royal cottage cheese. Shahi Paneer is made by using onions and tomatoes and dry fruits and curd and fresh cream and the creaminess  comes from the cream , curd as well as the dry fruits.

Similar dishes include Paneer Butter Masala and kadai paneer paneer butter masala is one of the most popular curries in Indian cuisine the difference between paneer butter masala is that the whole spices are used in Paneer Butter Masala where is Shahi Paneer have a sweet taste when compared to paneer butter masala.

Ingredients for making the Shahi Paneer

Malai Paneer 250 gram
Milk 1 cup
Fresh Cream / Malai 4 tbsp
Curd /Dahi 4 tbsp
Onion 2 medium size
Tomato 2 medium size
Cashew nut / Kaju 15 to 16
Green chilli / Hari mirch 2
Ginger Garlic /Adrak Lasan paste 1 tbsp
Black pepper 8 to 10
Cumin seed / Shahi jeera 1 tsp
Cloves / Lavang 4 to 5
Green Cardamom / Hari elaichi 3
Big cardamom / badi elaichi 1
Cinnamon stick / Dalchini 2
Tej patta / Bay Leaves 1
Kashmiri red chilli powder 1 tsp
Garam masala ½ tsp
Pure ghee / Clarified butter 4 to 5 tbsp
Sugar / Chini ½ tsp
Salt as per your taste

Prepping for Shahi Paneer 

1) Make a paste of onion, green chilli and cashew and remove it in a bowl and keep aside

2) make tomato puree  and remove it in a bowl and keep it aside as well

3)Make cubes of the Paneer

Method for making Shahi Paneer

1) in a kadai add about 4 tbsp of ghee which is clarified butter if you wish you can add oil or butter.

2)And once the ghee is a bit hot add the whole grams maslas, starting with bay leaves, cloves, cinnamon stick, black pepper, big elaichi and green elachis and the shahi jeera which is cumin seeds  

3)and once the cumin seeds start to sizzle then add the onion green chilli and cashews paste and mix it all in and do keep stirring it all in continuously as there is cashews in there there is a chance that it will stick to the bottom of the pan.

4)After a minute add the Ginger Garlic paste and mix it in as well and cook for the next 3-4 minutes

5)After 4 minutes add the salt, and kashmiri red chilli powder and the garam masala and now mix it all in and cook for 1 more minute.

6)After 1 minute add the tomato puree and mix it all in and cook it for the next 4-5 minutes or until the tomatoes are fully cooked.

7)Once the tomatoes are cooked add the curd which is dahi make sure it not sour          

  and  the fresh cream and the sugar  and mix everything in. make sure that at this time the

  flame is on low and now cook for 1 minute.

8)After 1 minute add about 4-5 tsp of water and mix it in                 

9)  add 1 cup of milk and mix it in. and keep mixing it for the next 2 minutes you can turn the flame on medium at this point.

10)After 2 minutes add the paneer pieces and gently mix that in as well, make sure the panner is properly covered with the gravy. And then cover and cook on a medium flame for the next 5 minutes.

11)After 5 minutes remove the lid and your shahi paneer is ready to serve.

12)Do serve it with some Garlic Naan or Roti or some Jeera Rice.
